Abstract : Aflatoxins levels in peanut represents a great deal of public concern, therefore the minimization of their content is an important target in peanut industry. A total of 75 peanut sample were collected from a commercial processing line in Ismailia, Egypt. These samples represented different types of peanut, early and late delivery times, peanut byproducts and the main processing steps. Aflatoxin levels were determined as B1, B2, G1, G2 and total in all samples using HPLC. Results indicated that the different peanut types contained more aflatoxin than the early delivered ones. Peanut roasting and color sorting decreased the aflatoxin level by 92.5%. Data also revealed that peanut byproducts contained relatively high levels of aflatoxin, were the shell, the seed coat and the rejected peanut seeds contained 177, 99.0 and 226.8µ g/Kg, respectively. The aflatoxin profile of the rejected seeds was maqinley B1 and B2.
